- 12 to 14 radishes
- 2 tablespoons unsalted butter
- 6 shallots, diced
- Handful of spinach
- 1 teaspoon fresh thyme
- pinch of salt
All ingredients are from Strawberry Grove Growers and are available in our vegetable boxes seasonally.
Remove the tops and roots of your radishes. Slice into quarters and set aside.
Heat butter over a medium low heat. Add in your diced shallots and cook for 2-3 minutes until they begin to soften.
Add in your radishes and thyme, cover and let cook stirring every now and then. After 4 minutes add in a handful of spinach and cook for a further 2 minutes. Your radishes should be tender but still crisp.
Add salt and pepper to season and you are done!
